You could ask the moving company for references, although they'll only give you good references, and sometimes you won't even be able to contact them. Instead, ask them for their 3 most recent customers. However, even then you don't know if they're recent customers and not just good references.
Another question to ask is there are any local businesses that use the moving company for repeat business -- that's a very good endorsement because a business won't keep using a moving company that doesn't do a good job each time.
Finally, search for reviews on the company you're considering hiring (although be cautious if you find only good reviews -- even good moving companies have the occasional bad review -- read this for more information on moving company reviews). Also, search for complaints about moving companies at the Better Business Bureau and the federal Website ProtectYourMove.gov.
As far as insurance... In a nutshell, the moving company usually provides a minimum amount of protection, but it's very small, so if you're concerned about your stuff, you can buy additional coverage. Anyways, here's the article on moving insurance.
Good luck with your move,
