How should I load the truck after packing to secure items such as appliances, furniture, and to make sure nothings broken by falling over while transporting to new location?

Loading a truck the right way is a real skill, and I doubt I will be able just to give you simple tips and instructions.
The best way to get all the basics would be to watch a video called "How to pack your life in a truck" developed by MovingMadeSimple.net especially for people who move themselves.
