How many visual estimates should we have?
We had booked four moving companies to give us on-site estimate, and only two showed up. Is it okay to choose one of the two or should we continue to get on-site estimates?

Its not good that the other two estimators didn't show up, but if the companies they represent have good public record I would still recommend rescheduling the meetings with them.
In any case, you need to make sure that all the visual estimates result in a flat guarranteed price offer that you can compare to other offers. Only this way you will be able to protect yourself from future problems with the mover, and also it will provide you with the right tools to negotiate discounts and save on your move.
